Babi Ketjap is pork meat simmered for over 2 hours in dark soy sauce (ketjap).
The meat and sauce have a lightly sweet flavour, non spicy.
After the simmering the meat is given rest for 2 days to let the full tasty flavour set in the dish, resulting in that typical full taste that the Indonesian food is known for.
