Atjar Tjampoer is a homemade mixed pickled vegetable dish, a combination of a variety of vegetables. These are cooked in vinegar with spices and herbs among other things like curcuma and turmeric.

It has a sweet and sour taste and is served as an accompaniment with a ‘rijsttafel’ (literally ‘rice table’; a combination of many dishes served as a buffet).

The sourness will cut through some of the richer dishes. While the sweetness will offset some of the spicier ones.
